Eventitis!
Carrot Cake Recipe courtesy of (blogless) Ian - first and last time I'll be making it - yummy but far too much hard work - to me baking is all about throwing everything into the mixer - turning it out into baking tins and let the oven do the rest. Anyhow I made it in honour of my guests. My mam and sis came down to Wexford and after a night in my home we then had a girly night away in Kelly's in Rosslare. Lots of eating, more eating, magazine reading, therapy suite pampering and generally a good rest by the sea which we all enjoyed.
Then back to work for a few days so that I could take Friday off. For this....
It was my graduation last Friday - not that you could tell from the photo above but I assure you it is me. On the day my husband insisted I get a professional photo - I really wasn't keen but funnily enough now I am glad I did.
Straight after the grad it was cross country again for us to my cousin's wedding in Co. Meath. We didn't arrive till nearly midnight - combination of long distance, grad (obv) and the need to stop for food along the way. We needn't have worried however, the party was only beginning. I'd love to show you some photos but since they were taken in the residents bar at about 3am I don't think anyone who was there would thank me. We finally got to bed at 6am - typical of a good Irish wedding. We had such a brilliant time and it was great to see so many of my extended family which I hadn't seen since my own wedding nearly a year and a half ago.
I don't think I was so happy the next day when I had to surface for a LUNCH date with friends! A glass of wine later all was right with the world again and we had a fab afternoon of food! fun and laughter. Everyone was in fantastic form and it was one of those days that you never want to end. End it had to as we needed to get back to Wexford on for a concert with DH parents the next day. The Opera Festival had kicked off during the week so the Bank Holiday Monday gave us the opportunity to stroll the streets and soak up the atmosphere and view all the art exhibitions on in the town. Wexford is such a great place to be at this time of year.
